Joy Behar Lasagna Recipe

While watching The View one day Joy was talking about an amazing lasagna she made and it got me thinking of a wonderful layered ziti I like to make so I merged the two and created this amazing recipe. Read more about the Joy Behar Lasagna Recipe.

Ingredients

2 tbsp. olive oil

cloves garlic, minced

2-3 bell peppers (any color), diced

1 whole large onion, diced 1 lb. Italian sausage

1 can (28 ounces) crushed tomatoes, with juice

2 cans (14.5 ounces) tomato sauce or 2 jar marinara sauce

2 tsp.  Italian seasoning

1/2 tsp. red pepper flakes

1 1/2 lb. mozzarella cheese, grated 1/2 c. grated parmesan cheese

Salt and pepper, to taste 16 oz. ziti noodles, cooked until not quite al dente

1 tub (15 ounces) whole milk ricotta cheese

1 whole egg

What to do: Joy Behar Lasagna Recipe

First you want to gather your ingredients. Then heat olive oil in a pot over medium heat. Add peppers, onions, and garlic and sauté for several minutes, or until starting to soften. Add Italian sausage and cook until browned. Drain off fat, leaving a bit behind for flavor and moisture. Now I add this mixture along with the crushed tomatoes and sauce in the crockpot and cook on low for 4-6 hours. If your pressed for time add the crushed tomatoes and sauce to beef and veggie mixture and simmer till hot.

When the sauce is ready, preheat oven to 375˚. In a separate bowl, mix together the ricotta cheese, 2 cups of the grated mozzarella, Parmesan, egg, and salt and pepper. Stir together just a couple of times (do not mix completely).

Cook and drain the pasta and rinse under cool water to stop the cooking and cool it down. Pour it into the bowl with the cheese mixture and toss to slightly combine (there should still be large lumps.) Add about half the cooled meat sauce and toss to combine.

Also, add half the cheese coated pasta to a large casserole dish or lasagna dish. Spoon half of the remaining sauce over the top, then top with half the remaining mozzarella cheese. Repeat with another layer of the coated pasta, the sauce, and the mozzarella. Bake for 30 minutes, or until bubbling. Remove from oven and let stand 5 minutes before serving.
